Executive Chef & Owner, Ross Burtwell
With a passion as strong as Ross Burtwell’s, it’s no surprise that the Cabernet Grill continues to be a top-ranking restaurant in the country. He has a true dedication to making every customer a happy one.
His desire to create a lasting culinary impression is only underscored by his wish that his dining guests feel at home. So while his food compares to some of the fanciest establishments in the city, the ambiance is as casual and comfortable as your own dining room.
With a culinary education beginning in the late 80s, and armed with apprenticeships from the TCA (Texas Chefs Association) and the renowned Westin Hotel Ross, was quickly selected by the Cascabel Restaurant and Bar in San Antonio and appointed Executive Sous Chef where he created the new Southwest fine dining restaurant.
From there Ross was promoted to Executive Chef at the Sheraton Fiesta Hotel in San Antonio where he handled Cascabel and another restaurant as well as banquets for a 300 room property.
Perhaps not feeling challenged enough, Ross’s next adventure was with the Grande Catering at Retama Park, where he helped open the $78 million dollar, class A, horse racing track. Not only was he handling an immense food demand, but he also hired and trained a staff of 87 for 14 kitchens.
By the time Ross arrived at the Flying L Guest Ranch in Bandera, Texas, his culinary expertise and hospitality niche was well carved. Which is obvious by the awards and accolades the Flying L received during his tenure.
In June of 2002, Ross discovered the Cotton Gin Village and before he knew it, he had jumped into restaurant ownership and hospitality in one fell swoop. The Cotton Gin Village became his passion and was rated #1 restaurant in the nation by TripAdvisor.com in June, July, and August of 2008. And it continues to be in the top ten ever since. He created the Texas Wine Maker Vintner Dinner Series and developed the largest “All Texas” wine list in the nation.
A long list of accomplishments, for sure. But you’d never hear it from him. What Ross enjoys most is hearing that his guests have enjoyed their experience at the Cabernet Grill and are taking great memories home.
